A recent issue of Cooking Light magazine had a recipe for “Blueberry Coffee Cake” – I gave it a whirl. Granted, I didn’t have the pan they said to use, so my end result doesn’t look like the photo. Also, all the blueberries sank to the bottom of the cake! It was yummy, but I don’t think I’ll make it again. I’ll hunt for some other blueberry treat.
Hey, I’d eat that cake – blueberries on the bottom and all. Looks delicious. I remember either reading or hearing on Food Network that if you dust the blueberries with flour, it will prevent them from sinking. Never tried it myself, but . . .
Are blueberries in season by you? We might need to bribe someone to bring some berries down to the pregnant one for her shower. She is craving berries.
